Campfires are a big part of cottage life. And Smore's are a perfect campfire treat. Why can't they also be a perfect treat to have on the dock? Here's a recipe for Smore's in bar form that our family and friends love. They are easy to whip up at the cottage, very portable and delicious. Why not make up a batch this August long weekend?
What you need:

1/2 cup unsalted butter, melted

1 large egg

1 cup light brown sugar, packed

1 tablespoon vanilla extract

3/4 cup all-purpose flour

About 3/4 cup roughly chopped graham crackers (1 pack of Bulk Barn graham crackers is perfect). You don't want to use graham crumbs as you want a bit of texture.

1 heaping cup mini marshmallows (or chop up some big campfire marshmallows to make them into small pieces)

1 cup semi-sweet chocolate chips
- 1 bowl to mix in
- 8x8 baking tray
- Spatula
- Whisk (if you have one - if not, use can use the spatula)
- Parchment paper (or greased foil).
What you do:

Preheat oven to 350F. Line an 8-by-8-inch baking pan with lightly buttered parchment paper, set aside. Make sure you use enough parchment (or foil) to hang over the edge so you can easily get the bars out of the pan.

Put the melted butter in a big mixing bowl. Give it a minute before you add the egg, brown sugar and vanilla. Whisk until smooth.

Add the flour and stir until just combined, don’t overmix.

Add the graham crackers and any crumbs on cutting board, marshmallows, chocolate chips and fold to incorporate.

Turn batter out into prepared pan, smoothing the top lightly with a spatula.
Bake for about 30 minutes, or until bars have firmed up in the center and edges look set. The marshmallows on the top may look like you've done the perfect campfire marshmallow.
If you can, wait 15-30mins before taking them out of the pan and cutting. Serve warm or at room temperature.
